SWEDISH BUTTERBALLS

Guaranteed, these cookies can be mailed to Aunt Harriet in Maine or frozen in August for Christmas giving and still retain their good, home baked flavor

  • 1 3/4 cups butter at room temperature

  • 3/4-cup confectioners' sugar

  • 1-teaspoon vanilla

  • 1 1/4 cups pecans, very finely chopped

  • 4 1/2 cups flour

  • 2 teaspoons pecan flavoring

  • Pinch of salt

Thoroughly blend all ingredients. Refrigerate for an hour. Roll into small (half inch) balls and bake in a 350 degree oven for 5-8 minutes. These cookies will not change color while baking. Check for done­ness by looking on the underneath side for a light tan color. Carefully roll in powdered sugar while still warm, and once again when completely cooled.
