PLUM GRANITAS

  • 1/2-cup water

  • 4 tablespoons sugar

  • 3 tablespoons plum wine

  • Juice of 1/4 lemon

  • 8 plums, peeled and pitted

  • 2 tablespoons plum preserves

In a saucepan, combine water, sugar, wine and lemon juice. Bring to a boil over moderate heat, stirring until sugar is dissolved. Simmer for 5 minutes and let cool. Cut up plums, and blend with pre­serves in a food processor or blender. Mix in syrup and semi-freeze. Stir and semi-freeze again. Repeat this process at least two more times. Dish up before freezing for the last time. Serves 4.

TO HELP YOU ALONG THE WAY: Place plums in a stainless steel bowl. Cover with boiling water and let set for 5 minutes. Drain and rinse with cold water. Skins should slip off easily with little or no effort.
