PINE NUT TARTLETS

  •  12 unbaked mini tartlet shells

  • 1/2-cup butter, melted

  • 2 eggs, lightly beaten

  • 1/2-teaspoon vanilla

  • 1-cup brown sugar

  • 1-cup pine nuts

  • Chocolate Chips

Add the eggs, sugar, and vanilla to the melted butter. Mix thor­oughly and gently stir in the pine nuts. Place three chocolate chips in each unbaked tartlet shell. Spoon in pine nut mixture until filled to the edge. Bake in a 3500 oven for 25 minutes, until the crust is golden brown and the mixture is bubbly. Makes 12 mini treats.
