BASIC FRUIT QUICHE CUSTARD

  • 2 egg yolks

  • 1 egg white

  • 1/4-cup cream

  • 1/2-teaspoon salt

  • 1/4-cup butter, melted

  • Juices from soaking fruit (see fruit quiche recipes)

  • 2 teaspoons vanilla

  • 1/3-cup confectioner’s sugar

Thoroughly mix ingredients with a wire whisk. Makes enough custard for 1 nine-inch quiche.
