MUSHROOM CHOWDER

Dad's Favorite

  • 2 cups potatoes, peeled and diced

  • 1 large onion, diced

  • 1 bay leaf

  • 4 garlic cloves, minced

  • 1 1/2 teaspoons oregano

  • 1/2-teaspoon rosemary

  • 1/2 cup fresh parsley, minced

  • 1/2 cup Worcestershire sauce

  • 2 teaspoons salt

  • 1-teaspoon pepper

  • 1/2-cup butter

  • 3 pounds mushrooms, cleaned and sliced 4 ounces Shitake mushrooms

  • 2 tablespoons mushroom powder

  • 8 cups vegetable broth

In a small stockpot, sauté potatoes, onion, herbs, and seasonings in butter, just until vegetables are tender. Add mushrooms, mushroom powder, and broth. Cook over medium heat for 15 minutes. Serve heated. Serves 10, or 8 if you have mushroom lovers.
