PEAR LEEK SOUP

  • 3 cups leeks, well washed and sliced

  • 6 tablespoons butter

  • 4 pears, peeled, cored, and diced

  • 6 cups vegetable broth

  • 1 teaspoon summer savory

  • Salt and white pepper

In a 2-quart saucepan sauté leeks in butter over moderate heat for 10 minutes. Add the diced pears and cook for an additional 5 minutes, stirring occasionally. Add broth and savory. Bring to a boil and simmer for 20 minutes. Salt and pepper to taste. Puree the mix­ture in a food processor or blender. Transfer the soup to a saucepan. Add salt and pepper, reheat and serve hot. Serves 6.
