PEAR LEEK SOUP |

In a 2-quart saucepan sauté leeks in butter over moderate heat for 10 minutes. Add the diced pears and cook for an additional 5 minutes, stirring occasionally. Add broth and savory. Bring to a boil and simmer for 20 minutes. Salt and pepper to taste. Puree the mixture in a food processor or blender. Transfer the soup to a saucepan. Add salt and pepper, reheat and serve hot. Serves 6. |
