MIXED FRUIT SOUP

  • 4 cups diced and peeled assorted fruit such as berries, plums, peaches, pears, cherries, etc.

  • 2-½ cups water

  • 3 tablespoons sugar

  • 2 slices lemon

  • 1-3" cinnamon stick

  • ½ cup raspberry/apple juice

  • 4 tablespoons raspberry syrup

  • ¼ cup orange juice

  • ¼ cup port wine

Mix together in a saucepan: fruit, water, sugar, lemon, and cinna­mon stick. Cover and cook until fruit is tender. Discard lemon and cinnamon. Force fruit mixture through a sieve to remove any seeds. Add syrup, Juices, port, and more sugar if desired. Serve chilled with a spoonful of sour cream, yogurt, or whipped cream and top with fresh mint leaves. Serve in 6-8 chilled wine glasses.
