CANTALOUPE SOUP WITH CHAMPAGNE

  • 3 medium cantaloupe melons, seeded, peeled, and cubed

  • 1 1/2 tablespoons powdered sugar

  • 3/4-teaspoon vanilla

  • One split of Champagne or sparkling wine, chilled

  • 3/4 cup whipping cream

  • 1/4-teaspoon sugar

  • 1/4-teaspoon vanilla

In batches, whip together the first set of ingredients in a food processor or blender. In a separate container, whip the second set of ingredients until it will hold a soft peak. Serve the soup in chilled bowls or champagne glasses with a spoonful of the whipped cream on top of each serving. Serves 6 to 8.
