BROCCOLI SOUP

The Duck's very first soup from which was learned: always peel the stems and never, ever use the flowers if they are yellow - a lesson not easily forgotten

  • 1 bunch of broccoli, cleaned, trimmed, peeled, and chopped

  • V4 cup butter

  • 1/2 cup finely chopped onion

  • 1-cup vegetable broth

  • 1-cup instant mushroom soup, prepared according to package

  • 1/2-pint sour cream

  • 1-teaspoon capers

  • 2 tablespoons red bell pepper, finely diced (or pimento)

In saucepan cook broccoli in butler until semi-soft. Add onions and broth and cook until broccoli is tender. Puree in food proces­sor or blender until smooth and well mixed. Add prepared soup mix, sour cream, capers, and pimentos, blend briefly. Tiny bits of red and green should be throughout the soup. This soup can be served either hot or chilled. Serves 4 to 6.
