Sauté leeks in butter till limp. Add broth, onions, curry powder and. potatoes until vegetables are soft. Puree. Add the remaining ingredients and puree again. There should be chunks of avocados throughout for texture. Serve this soup chilled. The curry gives it a very luminous green color. Serves 6 DID YOU KNOW: To speed ripen a hard avocado, place in a closed sack of flour at room temperature overnight. |
