SNOW PEA SALAD

  • 1 1/2 pounds snow peas, trimmed and cleaned

  • 1/2 cup red bell pepper or pimento, seeded and diced

  • 1 bunch of scallions, or 1 large leek thinly sliced (including best of greens)

  • 1/4-cup vegetable oil

  • 1/2 cup seasoned rice vinegar

  • 1 1/2 teaspoons ginger powder

  • 1/2-teaspoon thyme

  • 1-teaspoon salt

  • 1/2-teaspoon black pepper

Thoroughly mix all ingredients. Best when allowed to marinate overnight before serving. Serves 6.
