MARINATED MUSHROOMS

  • 2/3 cup red bell pepper (or pimento), finely chopped

  • 3 pounds mushrooms, cleaned and cut

  • 1-3 ounce package Enoki mushrooms (optional)

 DRESSING

  • 4 garlic cloves, minced

  • 1-teaspoon salt

  • 1/2-teaspoon pepper

  • 1/2-teaspoon dill weed

  • 1/2-teaspoon tarragon

  • 1-teaspoon celery seed

  • 1-cup vegetable oil

  • 2/3 cup red wine vinegar

Mix dressing ingredients together. Pour over prepared vegetables. Chill before serving. Serves 8-10.
