GREEN BEAN SALAD

  • 2 pounds green beans, trimmed, cut up into bite-size pieces, and steamed

  • 1 large onion, slivered

  • 1/2 pound mushrooms, thinly sliced

  • 1/2 cup red bell pepper (or pimento), seeded and diced

DRESSING

  • 1/2-cup vegetable oil

  • 1/3-cup malt vinegar

  • 4 garlic cloves, minced

  • 1-tablespoon oregano

  • 1 tablespoon dry mustard

  • 1-teaspoon salt

  • 1/4-teaspoon pepper

Mix dressing ingredients together. Pour over prepared vegetables. Toss. Chill overnight. Serves 6 to 8.
