COLE SLAW

  • 5 pounds of cabbage, shredded

  • 3 carrots, washed and grated

  • 1 leek, grated

DRESSING

  • 6 tablespoons mayonnaise

  • 7 tablespoons Mango chutney

  • 2 tablespoons hot mustard

  • 1-teaspoon salt

  • 1/2-teaspoon black pepper

  • 4 tablespoons seasoned rice vinegar

  • 1-tablespoon sugar

  • 1/4-teaspoon arrowroot

Mix the dressing ingredients in a food processor or blender until well mixed. Toss the dressing and the prepared vegetables together. Serve chilled.

Serves 10-12.
