5 pounds of cabbage, shredded
3 carrots, washed and grated
1 leek, grated
DRESSING
6 tablespoons mayonnaise
7 tablespoons Mango chutney
2 tablespoons hot mustard
1-teaspoon salt
1/2-teaspoon black pepper
4 tablespoons seasoned rice vinegar
1-tablespoon sugar
1/4-teaspoon arrowroot
Mix the dressing ingredients in a food processor or blender until well mixed. Toss the dressing and the prepared vegetables together. Serve chilled.
Serves 10-12.
