ASPARAGUS VINAIGRETTE

  • 3 pounds asparagus, trimmed

  • 1/2 red onion, finely chopped

  • 1 garlic clove, minced

  • 1/2 cup fruit vinegar (or malt)

  • 1/2 cup vegetable oil

  • 1/2 teaspoon dry mustard

  • 1/2 teaspoon dill weed

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/4 teaspoon savory

Cut asparagus into 3 inch pieces, discarding tough ends. Steam.

Mix cooled asparagus and red onion together. In a separate bowl thoroughly mix the remaining ingredients and pour over asparagus and onions. Allow to set for a couple of hours before serving.
