SPINACH QUICHE

  • 1/4-cup butter

  • 1 large onion, diced

  • 1 garlic clove, minced

  • Pinch of nutmeg

  • 3/4-teaspoon salt

  • 1/4-teaspoon pepper

  • 2 bunches of spinach, rinsed thoroughly, stems removed, and leaves chopped

  • 4 ounces Gruyere cheese, grated

  • Prepared basic quiche custard

Sauté in butter: onion, garlic and seasonings. Add spinach and cook uncovered until moisture is reduced. Fill a 9" pre-baked quiche crust and top with grated cheese. Using the end of a wooden spoon handle, gently make about 6-8 small wells in the spinach mixture so the holes reach the crust. Pour prepared custard mix over all. Bake on foil in a 350 degree oven for 20-25 minutes or until cheese is golden brown. Serves 6-8.
