MUSHROOM QUICHE

  • 1/4 cup butter

  • 1 large onion, diced

  • 3 garlic cloves, minced

  • 1 red bell pepper, diced (or 1/4 cup pimento)

  • 1-teaspoon thyme

  • 1/2-teaspoon oregano

  • 3/4-teaspoon salt

  • 1/4-teaspoon pepper

  • 1 1/2 pounds mushrooms, cleaned and cut up into bite size pieces

  • ¼ cup dry sherry

  • 4 ounces aged Gouda cheese, grated

  • Prepared basic quiche custard

Sauté in butter: onion, garlic, red bell pepper, and seasonings. Cook uncovered until tender. Fill a 9" pre-baked quiche crust, top with grated cheese, and pour prepared custard over all. Bake in a 350 degree oven for 20-25 minutes or until cheese is go/den brown. Serves 6-8.
