DANISH QUICHE

  • 1 pound baked ham, finely diced

  • 6 medium leeks, sliced

  • 1/4-cup butter

  • 2 teaspoons caraway seeds, crushed

  • 1/2-teaspoon salt

  • 1/4-teaspoon pepper

  • 1 tablespoon dry mustard

  • 4 ounces Aged Gouda cheese, grated

  • Prepared basic quiche custard

Sauté in butter: leeks and caraway until leeks are tender. Add salt, pepper, mustard and ham. Cook until ham is thoroughly heated. Fill a 9" pre-baked quiche shell. Top with grated cheese and pour prepared custard over cheese. Bake on top of foil in a 350 degree oven for 20-25 minutes or until cheese is golden brown. Serves 6-8.
