CHEESE AND ONION QUICHE |

| Sauté in butter: leeks, onion, shallots, and seasonings until the onions are tender. Fill a pre-baked 9" quiche crust and top with the grated cheeses. Make small wells with the end of a wooden spoon handle throughout the quiche. Pour prepared quiche custard over the cheeses. Bake directly on top of foil in a 350-degree oven for 20-25 minutes or until cheese is golden brown. Serves 6-8. |
