BROCCOLI QUICHE

  • 1 pound broccoli, cleaned and stems peeled 1 large onion, diced

  • 1 garlic clove, minced

  • 1/4 cup butter

  • 1/4 cup red bell pepper, diced (or pimento)

  • 1 teaspoon dill weed

  • 1 teaspoon basil

  • 3/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 4 ounces Gruyere cheese, grated

  • Prepared basic quiche custard

Sauté in butter: onions, garlic, red bell pepper, and seasonings.

Add broccol1 and cook until tender. Fill one 9" pre-baked quiche crust and top with grated cheese. Pour the prepared custard over top and bake on a foil lined oven rack at 350 degree for 20-25 minutes or until cheese is go/den brown. Serves 6-8.
