BAKED ENDIVE

  • 1 large fresh Belgium endive

  • 2 teaspoons butter

  • Pinch of garlic powder

  • Salt and pepper to taste Parmesan cheese

Cut each endive in half lengthwise. Place cut side up on a Cookie sheet or shallow casserole dish. Put a teaspoon of butter bits on each endive. Add a pinch of garlic powder to each half. Sprinkle with salt and pepper and desired amount of Parmesan cheese. Place under broiler until cheese is bubbly. Serve at once. Serves 1 or 2
