SUN DRIED TOMATOES

Ingredients:

  • 1 lbs. sun-dried tomatoes

  • 1/2 cup olive oil

  • 1-2 heaping Tbls minced garlic

  • 4 cups water

Heat olive oil in a large pan over medium heat.  Add minced garlic, cook until golden brown.  Add tomatoes, and stir to coat evenly.   Add water, stir, and cover.  Reduce heat, and simmer for 10-15 minutes, or until most of the liquid is absorbed.

Be careful not to burn the garlic in the first step. If it burns you will have to start over again, as the oil will have absorbed a harsh, bitter flavor.
