HORSERADISH/ APPLE RELISH

  • 1 horseradish root, peeled and finely grated

  • 3 red delicious apples, peeled and grated

  • 2 tablespoons distilled vinegar (or lemon juice)

Mix well, chill. Excellent with pork! Makes approximately 2 cups.

CAUTION: Have a well-ventilated room before attempt­ing this recipe. Whatever you do, do not rub your eyes with your hands if they have been in contact with the horseradish. A box of tissue should be handy.
