CRANBERRY RELISH

This is a holiday natural, served with turkey but is also good with all poultry as well as pork and lamb.

  • 2 1/2 pounds cranberries

  • 1 lemon grated including juice, pulp, and skin

  • 1 apple, cored and grated with the skin on 2 cups sugar

  • 1/4 cup chopped pecans

  • 1/4-cup raisins

  • 2 tablespoons brandy

  • 2 tablespoons white vinegar

  • 1-3 inch cinnamon stick

Mix all ingredients together in a large pot. Cover and gently simmer on low heat for 1 1/2 hours, stirring occasionally. Remove cinnamon stick before refrigerating. Makes approximately 4 cups.
