This is Headline News.  Many customers have been coming to us ever since we first opened our doors, asking for the tuna we use to take home to make their own albacore tuna salad; a simple recipe of tuna, sliced water chestnuts and mayonnaise.

Many years ago, our distributor discontinued carrying the convenient 6 oz size.  We have since then been bringing in other brands of tuna for our grocery shelves that reach our high level of expectations.  These tuna opportunities have been quick and fleeting as it has been a struggle to find a brand that will remain sure and steady.

Fishing Vessel St. Jude is a family owned business.  Their premium tuna is blast frozen at sea immediately after catching.  Then hand filleted and hand packed.  No artificial colorings or preservatives are in this can.

The delightful and unique ………

Cardamom is the common name for certain plant species native to India and southeastern Asia, and for their aromatic seeds. The true cardamom has large leaves and white flowers with blue stripes and yellow borders; it grows to about 10 feet in height. The fruit is a small capsule with 8 to 16 brown seeds; the seeds are used as a spice.

A couple of recipes

Cardamom Tea

Hot tea spiced with cardamom is popular in Eastern Africa. This recipe calls for making the tea first, then adding the cardamom, milk, and sugar.

What you need

  • cold water (three to six cups)

  • three or four teaspoons of tea (plain black tea, like Keemun, English Breakfast, or Irish Breakfast)

  • ground cardamom

  • sugar or honey

  • milk

What you do

  • In a saucepan or teakettle heat the water to a near boil. Transfer the water to a teapot and add the tea leaves, steep tea as normal.

  • Pour the tea into cups and add a pinch of ground cardamom to each cup. Add sugar, honey, and milk to taste. Stir.

Curried Chicken with Carrots  
  •  2 tablespoons olive oil

  • 1 pound onions, chopped

  • 3/4 pound carrots, peeled, cut into 1/2-inch cubes

  • 2 teaspoons curry powder

  • 1/4 teaspoon ground cardamom

  • 1/4 teaspoon ground coriander

  • 4 cups canned low-salt chicken broth

  • 2 tablespoons all purpose flour
     

  • 1 pound skinless boneless chicken thighs, cut into 1/2-inch cubes

  • 3 tablespoons chopped fresh cilantro

Heat oil in heavy large pot over medium heat. Add onions and carrots. Cover; cook until onions are tender but not brown, stirring occasionally, about 12 minutes. Mix in spices; stir 2 minutes. Transfer 1 1/2 cups onion-carrot mixture to blender. Add 2 cups broth and flour; blend until smooth.

Sprinkle chicken with salt and pepper. Add to pot and stir over medium heat 5 minutes. Add puree from blender and remaining 2 cups broth. Bring soup to boil. Reduce heat to medium-low and simmer until chicken is tender and soup thickens, stirring occasionally, about 25 minutes. Mix in cilantro; season soup to taste with salt and pepper.

Makes 4 servings.
