GREEN TEAS 

Green Tea for Health's Sake -
Two cups a day, that's all it takes

Though some admit, the flavor needs to be acquired in order to appreciate, many are discovering the health benefits of this lovely plant. With just a little experimenting, you will find great enjoyment and satisfaction in your own cup of tea.

First some facts...
Green Tea is not a special variety of tea. Rather, it consists of the same tea leaves as black, but are not processed as much. Processing causes chemical changes in the leaves that darkens the color, and destroys the epigallocatechin gallate, the ingredient scientists believe to be a vital anti-carcinogen. Unlike the black tea, green tea is never allowed to wither and ferment. Green tea contains a substantial amount of vitamin C, chlorophyll, and minerals. The Orient has long claimed the Green Tea refreshes and quiets that stimulating or "picking you up"

The very light "freshly dug roots" aroma is wonderfully invigorating with a mild, faintly grassy sweetness that is delicate, satisfying and very easy to drink. More than comparable to the very best Japanese green teas, but is grown in the Chinese region from which traditional Japanese-style teas originated. Much of Japan's tea tradition is a studied snapshot of China's archaic past. Ancient techniques of shading and steaming are still used to expertly craft this renowned green tea. Sencha is sometimes called 'spider leg' and this tea's needle-shaped leaves attest to that. With its bright water, mild blanched-greens aroma, light body and rich grassy aftertaste, this tea offers something truly unique. To this we have added toasted rice and popped com called 'irigenmai'. This adds a unique toasty and nutty flavor to an already superb tea.

GUNPOWDER

 

Given this name long ago, because of its resemblance to gunpowder. China bas always called it "Pearl Tea". The top of the line "Pinhead" variety is named because it is the choicest of buds and tips, rolled into tiny, compact pellets. This tea is the lowest in caffeine Flavor: Tiny pellets open up in hot water to give a strong greeny-coppery liquor with a pungent taste. Brewing Hints: 1-2 tsp pellets in a pot of hot water for 3-4 minutes.

GYOKURO

 

Precious Dew; the very best of Japan's teas and is always chosen to serve visitors. Flavor:  Leaves are beautiful, flat, pointed, emerald needles that give a smooth taste and a subtle perfume. This is a very refined and special tea. Brewing Hints - For 3 people, brew 4 tablespoons in 4 tablespoons previously boiled water. Steep for 1 1/2 to 2 minutes. Add more water for further infusions

This famous tea won a gold medal with Palms at the 1988 meeting of the International Institute for Quality Selection Flavor~ Famous for its flat, green leaves, jade green color and its delicious aroma and mellow flavor. The liquor is clear yellow with a slightly sweet aftertaste. Brewing Hints: Brew 2 tsp. in a scant l-cup hot water infuse for 3 minutes.

PAN FIRED

 

This well-known tea has been through a special process just as its name suggests. Heated slightly by a fired pan. Though the process may be different today than many centuries ago, it's delightful well-balanced. flavor remains unchanged. Brewing Hints: Brew 2 tsp. in a scant l-cup hot water infuse for 3 minutes.

SENCHA


 

The most the popular tea in Japan . Although it comes from the Camellia Sinesis plant , tea can be compared to a wine with one exception - aging;tea tastes better fresh The art of manufacturing green tea goes back many centuries , yet it is refined with every crop of tea . There are endless methods of steaming,  withering and drying green tea . Just like a  wine master follows precise steps to make a perfect wine a tea master makes sure each step is taken in a timely manner.

When Song Dynasty emperor Hui Zhong proclaimed white tea to be the culmination of all that is elegant, he set in motion the evolution of an enchanting variety. For centuries white tea has been shrouded in obscurity outside of China, but today its much-beloved qualities are being discovered by tea lovers around the world. Equally as stunning dry as it is steeped in water, white tea presents an exquisite range of flavor and aroma, from a delicate sweetness to a more pronounced brightness.

IS WHITE TEA BETTER THAN OTHER TEAS AS A POTENTIAL ANTI CARCINOGEN?

 'White tea" does not refer to black tea with milk, but rather to a specific form of tea in which the leaves and buds are simply steamed and dried. In this sense, white tea represents the least processed form of tea, since green, oolong and black teas undergo withering before various degrees of oxidation, White tea also contains a higher proportion of buds, which are covered with fine 'silvery' hairs that impart a light white/grey color to the tea. White tea brews to a pale yellow/light red color, and has a slightly sweet flavor with no 'grassy' undertones sometimes associated with. In the former studies using bacteria, white teas were generally more effective than green tea in inhibiting mutagenicity (mutagenicity is a result of unrepaired/misrepaired DNA damage and an early step in the process leading to cancer). White teas contained many of the expected polyphenols, some of which were present at higher concentrations than in green tea brewed under the same conditions.

 The Perfect Cup

 White teas are best when prepared like green tea. Their delicate nature will be destroyed by water that is too hard or too hot. Filtered water or spring water that is not too heavy will produce the best cup. Water that is too hot will cook the delicate leaves and render an inferior-tasting, astringent cup. The ideal water temperature is between 175 and 180 degrees Fahrenheit. Add 1 to 1.5 tablespoons of white tea per eight ounces of water in a cup or teapot. Pour water over the tea and steep for two minutes. One serving of white tea can be brewed several times, with each steep-revealing another element of flavor.

A very high quality white tea. Known as Bai Mu Dan, it has a very high percentage of Silver Needle buds to leaves. The majority of the pluckings are two or three leaves and one bud. The tea is naturally dried in the sun or inside under low heat in a very Well ventilated building. The taste has a sweet, fruity finish. This tea comes from Fuding County, legendary as the area where the very best white tea is produced. This tea is organically grown but the farm has another year to reach international certification standards.

ASSAM

 


 

Robust teas known for their malty flavor and dark liquor. These teas are grown in Northeastern India in the low-lying Assam region. These teas have a stronger character and will not be overpowered by a little milk or sugar

The finest selection of high-grown teas from the hillsides of Sri Lanka, A golden-colored cup of tea with character and taste. Bright liquor with excellent flowery flavor. The light cup makes this a superb choice for an after dinner tea.

CHINA SECHUNG OOLONG

 

the leaves of this tea are large and robust with a hint of green. This tea has a wonderful bouquet with a complex flavor.

DARJEELING TGFOP

 

Often known as the champagne of teas. Rare and very fine small-leafed variety tea from the Darjeeling region of Northern India in the foothills of the Himalayas. Darjeelings are known for being cleat and light but flavorful, with complex characteristics: You will not find full leaves as Darjeeling leaves are intentionally broken during processing.

EARL GREY


 

Earl Grey tea is a black tea blend, which gets its flavor from bergamot oil. This popular tea blend is named after Charles Grey, 2nd Earl Grey, who reputedly received a gift, probably a diplomatic perquisite, of tea that was flavored with bergamot oil. Bergamot is a fragrant citrus plant, used for the oil in its rind rather than for the flesh of the fruit. The legend usually involves a grateful Chinese mandarin, but this blend of tea was first made from fermented black Indian and "Ceylon" (Sri Lankan) teas, though over the years many other varieties have been used.

ENGLISH BREAKFAST


 

English breakfast tea is a blend of several black teas that is full-flavored, richly colored and full bodied. It is usually a blend of Indian and Ceylon (Sri Lankan) black teas.

IRISH BLEND


 

Irish Blend tea is composed of High Grown Ceylon tea grown over 4,000 feet above sea level mixed with a hearty Assam tea-a bold Indian tea with malted hints and deep color. Small leaf teas are used for a strong full liquoring effect

KEEMUN


 

Keemun is widely recognized as the finest black tea from China, and considered by many to be one of the finest teas available throughout the world. Its flavor is full bodied, deep and rich, with just a hint of smokiness. Finer breakfast blends often feature Keemun as a main ingredient due to its depth, pleasing rose like aroma, and excellent acceptance of both milk and sugar. Every lover of fine teas should have at least one tin of Keemun close by

LAPSANG SOUCHONG (House)


 

Distinct smoky scent and flavor. Many China teas have a subtle toasty note, but Lapsang Souchong has a dominating smoky flavor. The tea leaves are first withered over pine root fires, then panfried, rolled and oxidized. The leaves are finally placed in bamboo baskets and hung on wooden racks over smoking pine fires to dry and absorb the smoke. This results in a powerfully smoky aroma coupled with a smooth taste.
