Though some admit, the flavor needs to be acquired in order to appreciate,
many are discovering the health benefits of this lovely plant. With just a
little experimenting, you will find great enjoyment and satisfaction in your own
cup of tea.
First some facts...
Green Tea is not a special variety of tea. Rather, it consists of the same tea
leaves as black, but are not processed as much. Processing causes chemical
changes in the leaves that darkens the color, and destroys the epigallocatechin
gallate, the ingredient scientists believe to be a vital anti-carcinogen. Unlike
the black tea, green tea is never allowed to wither and ferment. Green tea
contains a substantial amount of vitamin C, chlorophyll, and minerals. The
Orient has long claimed the Green Tea refreshes and quiets that stimulating or
"picking you up"

GUNPOWDER

Given this name
long ago, because of its resemblance to gunpowder. China bas always
called it "Pearl Tea". The top of the line "Pinhead" variety is named
because it is the choicest of buds and tips, rolled into tiny, compact
pellets. This tea is the lowest in caffeine Flavor: Tiny pellets open
up in hot water to give a strong greeny-coppery liquor with a pungent
taste. Brewing Hints: 1-2 tsp pellets in a pot of hot water for
3-4 minutes. |

GYOKURO

Flavor: Leaves are beautiful, flat, pointed, emerald needles that
give a smooth taste and a subtle perfume. This is a very refined and
special tea. Brewing Hints - For 3 people, brew 4 tablespoons
in 4 tablespoons previously boiled water. Steep for 1 1/2 to 2
minutes. Add more water for further infusions |

When Song Dynasty emperor Hui Zhong proclaimed
white tea to be the culmination of all that is elegant, he set in
motion the evolution of an enchanting variety. For centuries white tea
has been shrouded in obscurity outside of China, but today its
much-beloved qualities are being discovered by tea lovers around the
world. Equally as stunning dry as it is steeped in water, white tea
presents an exquisite range of flavor and aroma, from a delicate
sweetness to a more pronounced brightness.
IS
WHITE TEA BETTER THAN OTHER TEAS AS A POTENTIAL ANTI CARCINOGEN?
'White
tea" does not refer to black tea with milk, but rather to a specific
form of tea in which the leaves and buds are simply steamed and dried.
In this sense, white tea represents the least processed form of tea,
since green, oolong and black teas undergo withering before various
degrees of oxidation, White tea also contains a higher proportion of
buds, which are covered with fine 'silvery' hairs that impart a light
white/grey color to the tea. White tea brews to a pale yellow/light
red color, and has a slightly sweet flavor with no 'grassy' undertones
sometimes associated with. In the former studies using bacteria, white
teas were generally more effective than green tea in inhibiting
mutagenicity (mutagenicity is a result of unrepaired/misrepaired DNA
damage and an early step in the process leading to cancer). White teas
contained many of the expected polyphenols, some of which were present
at higher concentrations than in green tea brewed under the same
conditions.
The
Perfect Cup
White
teas are best when prepared like green tea. Their delicate nature will
be destroyed by water that is too hard or too hot. Filtered water or
spring water that is not too heavy will produce the best cup. Water
that is too hot will cook the delicate leaves and render an
inferior-tasting, astringent cup. The ideal water temperature is
between 175 and 180 degrees Fahrenheit. Add 1 to 1.5 tablespoons of
white tea per eight ounces of water in a cup or teapot. Pour water
over the tea and steep for two minutes. One serving of white tea can
be brewed several times, with each steep-revealing another element of
flavor. |

Fuding County, legendary as the area where the very best white tea is

Himalayas. Darjeelings are known for being cleat and light but
flavorful, with complex characteristics: You will not find full leaves
as Darjeeling leaves are intentionally broken during processing. |

EARL GREY

Earl
Grey tea is a black tea blend, which gets its flavor from bergamot
oil. This popular tea blend is named after Charles Grey, 2nd Earl
Grey, who reputedly received a gift, probably a diplomatic perquisite,
of tea that was flavored with bergamot oil. Bergamot is a fragrant
citrus plant, used for the oil in its rind rather than for the flesh
of the fruit. The legend usually involves a grateful Chinese mandarin,
but this blend of tea was first made from fermented black Indian and
"Ceylon" (Sri Lankan) teas, though over the years many other varieties
have been used. |

ENGLISH BREAKFAST

English breakfast
tea is a blend of several black teas that is full-flavored, richly
colored and full bodied. It is usually a blend of Indian and Ceylon

LAPSANG SOUCHONG (House)

Distinct smoky scent and flavor. Many China teas have a subtle toasty
note, but Lapsang Souchong has a dominating smoky flavor. The tea
leaves are first withered over pine root fires, then panfried, rolled
and oxidized. The leaves are finally placed in bamboo baskets and hung
on wooden racks over smoking pine fires to dry and absorb the smoke.
This results in a powerfully smoky aroma coupled with a smooth taste. |
